The Chene Vineyard is located on the Southwest side of the Edna Valley appellation, sitting just 4 miles from the Pacific. The 6.5 acre vineyard was planted in 2010 with one acre planted to Wente clone Chardonnay. I started farming the Chene Vineyard using biodynamic farming practices at the end of the 2017 vintage. The vineyard was certified Demeter biodynamic on June 17th, 2020., making it the second vineyard to be so in our appellation.
The Chardonnay is picked for natural acidity and is lightly foot tread and soaked on it’s skins for 24 hours before being whole bunch pressed. The wine is fermented with native yeast in neutral french oak barrels and then aged on lees for 10 months before it’s first racking to bottle, being bottled unfined and filtered. Think olive oil cake, lemon zest, and sea salt.
