This wine is our most important wine among restaurants. This wine is a blend of Rancho Sisquoc, Bien Nacido and Rancho Ontiveros Vineyard, all located in Santa Maria Valley. Each block is vinified separately with partial whole cluster, native yeast and is pressed based on taste. Picking decisions are based on acidity and flavor, with no additions other than minimal sulfur during elevage. The cuvee is aged in all neutral oak barrels for 10 months. This wine is bottled unfined and unfiltered.
